Jay's Ragin' Cajun Rice

Ingredients
1 cup brown rice
2 cups pure water
16 oz. soft tofu (cut into 1 inch cubes)
1 cup frozen green peas
1 small white onion
1 small piece of fresh ginger (peeled and grated or chopped fine)
1/2 tsp. curry powder
1/2 tsp. black pepper
1 tbs. olive oil
1/4 tsp. potassium based salt substitute

Directions
In a pan, place the rice and water, bring to a boil, then reduce heat, cover and cook 30-40 minutes until the rice is tender. In a lightly oiled skillet, place the tofu and cook until lightly browned over medium heat. In a lightly oiled skillet place the onion, peas, ginger, and curry and sauté until the peas and onions are soft. To serve, place the rice in a large bowl, then add the tofu and cooked vegetables and toss lightly. Add pepper and salt-substitute to taste.
