Ingredients
2 grilled chicken breasts (thin sliced lengthwise)
Salad
6 cups Romaine lettuce leaves (torn into salad pieces)
3 red radishes (thin sliced)
½ small red onion (peeled and thin sliced)
2 oz. Crumbled Feta cheese
1 medium tomato (chopped)
8 Greek olives
Dressing
2 tbs. fresh lemon juice
3 tbs. extra virgin olive oil
½ tsp. Salt
½ tsp. Black pepper
1 tsp. Dijon mustard
(Stir all ingredients together in a bowl)
Directions
Place the lettuce, radishes, onion, tomato, olives and Feta cheese in a large bowl and toss lightly. Place the chicken breasts on top of the salad and then top with the dressing. For an extra treat toss in 6 to 8 walnut halves and dig in!
