Lean n' Lucious Low Fat French Fries

Ingredients
(Choose organic foods when possible)
3 medium potatoes (approximately 6 oz. each)
1 tbs. olive oil (dispensed from a pump sprayer)
potassium salt substitute (to taste)
2 tbs. no salt mustard
2 tbs. no salt, unsweetened ketchup

Directions
Preheat oven to 475 degrees. Line a flat baking pan with aluminum foil, then spray the foil with olive oil until well coated. Wash and scrub the potatoes very well but do not peel. Cut each potato into half-inch (or smaller) slices that are the full length of each potato. Place the potato slices on the flat baking pan and arrange evenly in a single layer. Spray the potatoes lightly with olive oil until evenly coated Bake for 30-35 minutes (or more) until golden brown. To brown the potatoes evenly, turn the potatoes over after 15 minutes of baking. Sprinkle with salt substitute and dip in either the mustard, ketchup or both.
