Ingredients
1 green onion (chopped)
½ small white onion
1 zucchini (washed and sliced thin)
2 oz. sliced turkey breast (cooked and chopped)
1 whole egg
2 egg whites
1 tsp. olive oil
1 sprig fresh Rosemary
1 large tomato (washed and sliced)
3 cherry tomatoes (washed and cut in half)
Directions
In a non-stick skillet, place the olive oil and sauté the onions and zucchini until soft and tender. Add the chopped turkey breast then set aside. Place the egg whites and whole egg in a bowl and whip together then pour into a medium heated, non-stick skillet, lightly sprayed with olive oil, cover and cook until the whites are solid. Add ¼ cup of the sautéed onion, turkey and zucchini and fold over, then slide the omelet onto a large plate. Cover this with the chopped green onion and cherry tomatoes. Place the remaining onion, turkey and zucchini next to the omelet, and arrange the tomato slices to decorate the plate. Top the omelet with the sprig of Rosemary and enjoy this amazingly delicious, nutritious, filling, fat burning breakfast.
