Ingredients
(Choose organic foods when possible)
4 cucumbers (peeled, cut in half lengthwise and then thin slice)
1 cup nonfat plain yogurt
10 drops liquid stevia (get at health food store or here at jayrobb.com)
2 cloves fresh garlic (peeled and diced)
1 tbs. Barlean's Flax Seed Oil (health food store refrigerated section or here at jayrobb.com)
1 green onion (chopped)
Directions
Place all ingredients in a bowl and stir together until lightly mixed. Place in the refrigerator and chill for an hour, then serve.
Note
This is a light, easy dish to make that is the perfect addition to any main meal. It is rich in Omega-3 Essential Fatty Acids, is high in water content, high in fiber and low in calories. This easy-to-make salad is also great over a plate of steamed vegetables. Makes two servings.
