Ingredients
12 oz. pure water
2 oz. (2 scoops) Jay Robb's Egg White Protein (vanilla)
1 tbs. pure unrefined coconut butter (Omega Nutrition brand is good and can be
found at a health food store) or melted butter
2 tsp. pumpkin pie spice
3 oz. (3 scoops) Jay Robb's YAMMIT! (sweet potato nuggets)
1 oz. (1 scoop if you use Jay Robb's protein scoop) Arrowroot Powder
2 tbs. Agave syrup (can be found at your local health food store or
online)
Topping (Optional)
4 oz. low fat sour cream mixed with 1 tbs. Agave
Directions
Place the water in a blender and begin adding each ingredient, one-by-one,
buzzing for a few seconds after each ingredient is added. Once all ingredients
are added, blend until creamy smooth
Coat a 9-inch pie pan with unrefined coconut butter, then pour the mixture from
your blender into the pie pan. If needed, tap the pan on a counter top until the
mixture is evenly spread across the pan.
Bake in a 425-degree oven for 15-20 minutes until the outside is golden brown
and the inside is cooked so that when you slip a toothpick into the middle it
pulls out clean.
Remove from the oven and let cool for about 30-60 minutes. The pie will be puffy
when you first remove it from the oven, then it will slowly fatten out, which is
what you want it to do before cutting. Cut into six pieces and top each slice
with a dollop of the sour cream/Agave topping if desired. Go ahead…indulge and
enjoy this
special "guilt-free" holiday delight! A taste treat without the sugar
"rush"!

*Agave is the juice of the Blue Agave Cactus, tastes similar to honey yet has a
very low glycemic index meaning it will not give you the "rush"
associated with honey and other simple sugars. Agave can be hard
to find so we carry it here on our website for your convenience.
