Holy Guacamole

Ingredients
(Choose Organic when possible)
2 ripe Hass avocados (skin and pit removed)
1/2 cup fresh cilantro leaves (washed and stems removed)
1/2 fresh lime (juiced)
1 small ripe tomato (chopped)
1/2 small white onion (chopped)

Directions
In a bowl, mash the avocado with a fork until creamy smooth. Add the tomato, lime, onion and cilantro leaves and mix until well blended.

Note
If it is a low-carb day for you, use cucumber slices, raw vegetables or celery sticks for dipping. If it is a high-carb day, you can use BAKED corn tortilla chips (unsalted), rice crackers (unsalted), or baked potato chips (unsalted).
